Ingredients : 

2 tsp vegetable oil 

1/2 lb ground Mexican chorizo 

2 russet potatoes, peeled and cubed into 1/2 inch cubes 

1 medium yellow onion, diced 

1 serrano pepper, thinly sliced 

2 green onions, thinly sliced 

kosher salt and black pepper, to taste 

2-3 large eggs, lightly beaten 

1 Tbsp unsalted butter 

soft taco sized corn or flour tortillas 

chopped fresh cilantro, for garnish 

salsa, for garnish 

sour cream, for garnish 

shredded cheese, for garnish
