Ingredients:

1 (28 oz) (850g) pinto beans, drained and rinsed

1/2-3/4 cup (120-180ml) water

1 small onion, diced

2 cloves garlic, minced

1/2 teaspoon cumin

1/2 teaspoon chili powder

1/2 teaspoon dried oregano

salt, pepper, and cayenne pepper to taste

12 large eggs, lightly beaten

2-3 tablespoons butter

12 corn or flour tortillas (6 inch size)

Toppings of choice: shredded cheese, salsa, avocado, cilantro, hot sauce, pico de gallo, guacamole
