Ingredients:

1 kilo of pork pulp can be pulp from the leg or pork palette.

2 tablespoons vegetable oil or pork butter

Water as needed to cover the meat

For the sauce:

4 wide chillies

4 guajillo chillies

⅛ of an optional avocado seed *

3 garlic teeth

8 grains of pepper black

1 teaspoon dry Mexican oregano

2 laurel leaves

½ teaspoon cumin seeds

½ inch of a cinnamon stick

½ teaspoon dry thyme

Salt to season to taste

* Orange zest (optional)
