Ingredients:
  • 1 pound dry pinto beans
  • 2 tablespoons plus 2 teaspoons kosher salt, divided
  • 2 quarts plus 1 quart water, divided
  • 2 tablespoons olive oil
  • 1 large onion, minced
  • 4 garlic cloves, minced
  • 1/2 cup taco seasoning mix (store bought or make your own
  • 1 (6 oz) can tomato paste
  • 4 cups (1 quart) low sodium vegetable broth (for non-vegetarian version, may substitute with chicken broth)
