for the Meatballs ⁣:

2lbs lean ground beef ⁣
1/2 white onion finely diced ⁣
1 small bunch of mint finely chopped ⁣
3/4c rice ⁣
3 eggs⁣
1 Tbsp cumin ⁣
1 Tbsp sea salt ⁣
1/2 Tbsp onion powder ⁣
1 tsp garlic powder ⁣
1 tsp Mexican oregano ⁣
1 tsp pepper ⁣

Mix together in a large bowl and roll meatballs to desired size. ⁣

for the Broth ⁣:

5 c. Beef broth ⁣
3 c. Chicken stock⁣
1/2 onion diced ⁣
3 Roma tomatoes diced ⁣
3 Roma tomatoes boiled ⁣
4 garlic cloves finely chopped ⁣
5 c beef stock ⁣
3 c chicken stock ⁣
3 diced zuchinnis (or white Mexican squash)⁣
3 diced carrots ⁣
1 chayote diced (optional) ⁣
4 stalks of cellery, diced ⁣
1lb golden or white potatoes ⁣
quartered or halved⁣
1 small bunch cilantro ⁣

Garnish with more diced mint, lime juice and chipotle.⁣
