Fried chicken and cheese empanadas

Empanada dough:
4 cups of flour
2 sticks of salted butter, plus 2 tablespoons (frozen butter)
1 teaspoon of salt
1 egg
1 cup and a bit more of very cold water

I don’t have a food processor so I used a grater for the frozen butter.
Then added the flour, salt, and with your hands crumble the flour with the butter until the texture becomes like sand.
Add the egg and mix with your hand with a little water at a time.
The dough shouldn’t be too sticky or too dry.
Remove from bowl and knead on counter for a couple minutes. ( don’t work it for too long)
Place in plastic wrap and set in fridge for 20 minutes
