Ingredients :

2-3 chicken leg quarters
4chile arbol, remove the seeds
5 chile guajillo, seeds removed
1 chipotle pepper
3 small-medium tomatoes
1/2 onion
1-2 garlic cloves
2 cups of water, to boil the Chiles in. Keep the water.
2 tablespoon oil
Salt or chicken knorr

Directions :

1. Seed and devein the Chilis
2. Place the Chilis in a pot and cover them in water, about 2 cups. When the water starts to boil turn the heat off and cover. Let them sit until the Chilis become plump and has softened.
3. To a blender add the Chilis, garlic, chipotle pepper, onion, tomatoes, salt or knorr, and add 1/2 cup of the water the chilis boiled in.
