Fill a big stock pot half way with water. Add 1 whole yellow onion, I head of garlic and 1 bay leaf and bring to a boil. Add your clean and rinsed pata de Res (beef foot) and cook for 1.5 hours skim any foam that rises. Add your cleaned and rinsed menudo and cook for 1 hour add your chile Rojo and continue to cook until tender. Add your hominy and simmer another 15 minutes and done.

10 guajillo chiles
15 Chiltepin
4 New Mexico chiles
4 chile de arbol
2 cloves garlic
1/4 of an onion
1 tsp oregano
1 tsp cumin (optional)
Kosher salt to taste
