Ingredients :

2lbs Beef Chuck
Water – fill until meat is covered
1/2 onion
3-4 Chile de arbol
1 pack Chile New Mexico
1 pack Chile Pasilla
1 tablespoon Oregano
1 tablespoon salt
1 table spoon pepper
5 pieces of garlic
Cilantro, limes and onion to taste

Directions :

Cut the beef in half and cook In a tiny bit of oil (teaspoon) add onion, and Chile De Arbol. Cover the meat completely with water and boil, and once boiling remove excess foam.
Remove onion and Chile from pot and put aside. (Use it later)
