Blackened salmon salad!
It’s just a salmon filet I cut into bite sized nuggets and seasoned with Zatarains blackening seasoning then seared in a hot pan for 2-3 minutes per side and into the oven 375° for 5 minutes so that it has a nice sear on the outside and still moist inside yet cook thoroughly.
This is on a bed of chopped romaine lettuce with hard boiled eggs, cucumber, avacado, roasted peppers, tomato, bread and butter chips and cucumber ranch dressing . #delish
